Sugared Fritters

Ingredients
  • 3 to 4 cups/420 to 550g flour
  • Buñuelos
    From Frida's Fiestas Cookbook
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 tablespoons /60g butter, melted
  • 2 eggs
  • 1/2 cup/125ml milk
  • Lard
  • Sugar and cinnamon
  • Makes 12 to 15 fritters    

    1. Sift 3 cups/420g of the flour with the baking powder, sugar, and salt. In a separate bowl, combine the butter with the eggs and milk. Slowly beat in the flour mixture to form a smooth dough. Gradually add more flour, beating vigorously, until the dough is stiff. Roll out on a lightly floured surface. Shape into small balls about the size of a walnut and brush with melted lard. Cover and let stand for 20 minutes.

    2. Roll out the balls until they are thin and flat. Let stand for 10 minutes.

    3. Fry in hot lard until golden. Drain on brown paper and sprinkle with a mixture of sugar and cinnamon.
