Sausage, Apple and Apricot Stuffing

Ingredients
  • 2 cups finely chopped yellow onion
  • 1 cup chopped celery
  • 6 tbs butter
  • 1 pound chorizo or other spice sausage, cut into 1/4-inch dice
  • 8 cups whatberry or other whole-grain bread, cut into 1/2-inch cubes and toasted in oven
  • 1 cup diced, peeled tart apples
  • 1 cup diced dried apricots
  • 2 tsp minced fresh oregano, or 1 tsp dried oregano
  • 1/2 to 1 cup chicken stock or Basic Game Bird Stock
  • Stuffes an 18 to 20 lb. Turkey    


    Instructions

    1. Preheat oven to 325. In a large skillet, saute onion and celery in butter until onion is translucent. Add sausage and saute 5 minutes. In a large mixing bowl, combine onion mixture with all remaining ingredients except for stock. Gradually add stock until mixture is moist but still light and loose.

    2. Place stuffing in a lightly buttered ovenproof casserole and bake in oven, covered, until the edges are lightly browned and slightly crips, 1 to 1 1/2 hours. Remove cover for the last 15 to 20 minutes of cooking. Makes enough to stuff an 18- to 20-pound turkey, if desired.
